Garlic & Lemon Roasted Pork Loin
- 5 clove of garlic, chopped
- 1 zest of one lemon
- 1 juice of one lemon
- 1/4 tsp cayenne pepper
- 2 tbsp oregano
- 1/2 cup olive oil
- 1 salt and pepper (use your own preference)
- 2 lb pork tenderloin
- In a blender or food processor blend all ingredients for your marinade just until smooth.
- Place pork tenderloin in a 9x13 glass baking dish and cover with marinade, turning over to make sure its all coated well.
- Cover with saran wrap and put into refrigerator for at least an hour.
- The longer it marinades the better!
- Preheat oven to 375F.
- Bake for roughly an hour and a half.
- Once done cover with foil and let rest about 10 minutes without cutting into meat.
- You don't want to lose all those yummy juices!!

- Slice it up and enjoy!
- You can also make a gravy to pour over by using your pan juices mixed with some chicken broth (or whatever broth you have) with about a tablespoon or two of flour, whisking til smooth and thickened.
