Baked Artichokes With Eggs(Carciofi Al Forno Con Uova)
- 3 eggs
- 1/4 tsp. salt
- 1/4 c. Parmesan cheese
- 3 pkg. frozen artichoke hearts, cooked slightly
- 3 cloves garlic, sliced thin
- 1/4 c. minced fresh parsley
- 1/4 tsp. ground pepper
- 1/4 c. olive oil
- salt and pepper to taste
- Preheat oven to 350u0b0.
- Whisk eggs, salt and cheese.
- In a 10-inch glass baking dish, place 1/2 of the cooked artichoke hearts
- in one layer.
- Sprinkle 1/2 of the garlic, parsley and pepper
- on
- top of artichokes.
- Put the rest of the artichokes on top
- and
- repeat
- with the rest of the garlic and parsley. Pour egg
- mixture all over artichokes and sprinkle with olive oil, salt
- and pepper.
- Bake for 30 to 40 minutes, until eggs are set. Makes 6 to 8 servings.
