Bubbe Leyah's Roasted Vegetables
- 3 large beets, peeled and cut into chunks
- 2 large sweet potatoes, cut into chunks
- 3 medium red potatoes, cut into chunks
- 1 lb asparagus, cut into 1-inch pieces
- 1 medium yellow onion, sliced
- 5 garlic cloves, sliced
- 3 tablespoons olive oil
- 2 teaspoons garlic powder
- 1 teaspoon salt
- Preheat oven to 400F Line a 9x13 pan with parchment paper.
- Toss beets with 1 T of olive oil.
- Spread evenly into pan, and cook for 15 minutes.
- While the beets are cooking, combine sweet potatoes, red potatoes, asparagus, onion and garlic cloves together in a large bowl.
- In a small bowl, whisk together remaining olive oil, garlic powder and salt.
- Add to the bowl of vegetables and toss well.
- When the beets have cooked for the 15 minutes, add the veggie mixture to the pan and stir together.
- Cook another 40-50 minutes, stirring half-way through.
