Pineapple Lemon Meringue Pie Recipe
- 1 1/4 c. whole wheat bread crumbs
- 3 tbsp. frzn apple juice concentrate
- 1 teaspoon vanilla extract
- 1/8 teaspoon lemon extract
- Place ingredients in a bowl, mixing well.
- Using a rubber spatula, press the mix firmly into the non-stick pie pan (bottom and sides) to create an even crust.
- Bake the crust in a 350 degree oven for 15 min till lightly browned.
- Remove from oven and allow to cold.
- Fill as directed below.
