Appetizer Mini Quiches Recipe
- 2 c. all-purpose flour
- 1/2 tsp salt
- 1/2 tsp chili pwdr
- 1/3 c. butter or possibly margarine cool
- 1/3 c. solid vegetable shortening
- 1 x egg cool water -- as required
- 3/4 c. cooked ham -- finely diced
- 3 Tbsp. minced green chiles
- 1/4 c. minced green onions including tops
- 1 1/2 c. shredded Monterey jack cheese
- 2 x Large eggs
- 3/4 c. lowfat sour cream
- Prepare Flaky Pastry:Combine flour, salt and chili pwdr.
- Cut in hard butter and solid vegetable shortening till mix resembles fine crumbs.
- In a small bowl, beat egg and sufficient water to make 1/4 c.. Add in to flour mix, 1 Tbsp.
- at a time, mixing till dough holds together.
- Shape into a ball.
- On a floured board, roll dough 1/16-inch thick.
- Cut into 2-inch circles, rerolling scraps to make about 72 circles.

- Prepare Ham and Green Chile Filling:Mix diced ham, chiles and green onions.
- Add in shredded cheese, mixing well.

- Prepare Filling Topping:Beat Large eggs lightly; beat in lowfat sour cream till smooth.
- Spoon about 1 tsp.

- Bake in a 375 F oven till tops are lightly browned (about 20 min).
- Let cold for 5 min; then tip quiches out of pans.
- Serve hot or possibly at room temperature.
- If made ahead, let cold completely, wrap airtight, and chill till next day; to reheat, spread quiches in a single layer in a shallow pan and place in a 350 oven till warm (about 10 min).
