Apple Chicken Mandarin Recipe
- Spicy Peanut Sauce (recipe follows)
- 2 Tbsp. vegetable oil
- 1 1/2 c. minced celery
- 2 c. shredded cooked chicken
- 2 x Red Delicious apples -- cored, sliced in thin strips
- 4 x green onions -- diagonally sliced
- 2 Tbsp. minced fresh cilantro
- 2 c. shredded lettuce
- 6 x packaged Mandarin pancakes (see Note)
- Spicy Peanut SauceIn medium bowl, combine 1/2 c. chunky peanut butter, 1/3 c. chicken broth, 1 Tbsp.
- soy sauce, 2 tsp.
- Oriental sesame oil, 2 tsp.
- rice wine vinegar, 2 tsp.
- honey, 1 garlic clove, chopped, and 1/8 tsp.
- cayenne pepper; mix well.
- Prepare Spicy Peanut Sauce and set aside.
- In large skillet, heat oil over medium heat.
- Add in celery and saute/fry till just tender; add in chicken and 1/4 c. Peanut Sauce.
- Cook just till chicken is heated through.
- Remove from heat and add in apples, green onions, and cilantro to chicken mix; toss well.
- To serve, wrap pancakes in microwave-safe plastic wrap and microwave on low
- (30 percent) 1 to 1 1/2 min to heat through.
- Place 1/3 c. of lettuce and about 1/2 c. chicken mix in center of each hot pancake.
- Fold bottom of pancake over filling; fold each side toward center to cover filling.
- Serve with remaining Spicy Peanut Sauce.
