Easy Roast Beef Potato Casserole Recipe
- 1 pkg. Hungry Jack Hash Brown Potatoes
- 2 c. (8 ounce.) shredded cheddar or possibly American cheese
- 1 tbsp. instant chopped onion or possibly 1/4 c. minced onion
- 2 c. lowfat milk
- 12 ounce. can roast beef with gravy or possibly 1 1/2 c. cut-up beef and gravy
- 10 3/4 ounce. can condensed cream of mushroom soup
- 4 ounce. can mushroom stems and pcs, liquid removed
- Preheat oven to 350 degrees.
- Using 1 Tbsp.
- shortening or possibly butter, grease 12x8-inch baking dish or possibly 2-qt casserole.
- In large bowl, combine all ingredients; blend well.
- Pour into greased dish.
- Bake, uncovered, 40-50 min or possibly till potatoes are tender.
- Chill any leftovers.
- Yield: 8 (1 c.) servings.
- HIGH ALTITUDE: 5200 feet: Increase lowfat milk to 3 c.. Bake at 375 degrees 40-50 min.
