Chocolate Pound Cake
- 2 c. (12 oz.) milk chocolate chips
- 1/2 c. butter, softened
- 2 c. sugar
- 4 eggs
- 2 tsp. vanilla extract
- 1 c. buttermilk
- 2 Tbsp. water
- 2 1/2 c. sifted cake flour
- 1/2 tsp. salt
- 1/4 tsp. baking soda
- 1/2 c. chopped pecans (optional)
- confectioners sugar (optional)
- In a saucepan over low heat, melt chocolate.
- Remove from heat.
- In a mixing bowl, cream butter and sugar until light and fluffy.
- Add eggs, one at a time, beating well after each addition.
- Blend in melted chocolate and vanilla.
- Combine buttermilk and water.
- Combine flour, salt and baking soda.
- Add to batter alternately with buttermilk mixture.
- Fold in nuts if desired.
- Pour into a greased and floured 10-inch tube or fluted tube pan.
- Bake at 325u0b0 for 1 and 1/2 hours or until a toothpick inserted near the center comes out clean.
- Cool for 10 minutes; remove from pan to a wire rack.
- Dust with confectioners sugar if desired.
