Chocolate Cherry Cobbler(Low-Fat)
- 2 Tbsp. packed brown sugar
- 2 Tbsp. cornstarch
- 1 (16 oz.) can tart red cherries (packed in water), undrained
- 1/4 tsp. almond extract
- 6 drops red food coloring
- 2 Tbsp. fat-free margarine
- 1/2 c. flour
- 1 Tbsp. plus 1 tsp. cocoa
- 1 Tbsp. packed brown sugar
- 3/4 tsp. baking powder
- 1/3 c. skim milk
- 1 tsp. vanilla
- Heat oven to
- 375u0b0.
- Mix 2 tablespoons brown sugar and cornstarch in saucepan. Stir in cherries. Cook over medium heat, stirring some until slightly thickened, 4 to 5 minutes.
- Stir in almond flavoring and food coloring.
- Pour into ungreased 1-quart casserole or a 9 x 9-inch square cake pan. Cut margarine into flour, cocoa and 1 tablespoon brown sugar until finely crumbled. Stir in milk and vanilla. Drop dough by 6 spoonfuls onto hot cherry mixture.
- Bake 20 to 25 minutes. Serve warm.
