Pear, Caramelized Onion and Blue Cheese Tart
- 1 Tablespoon Butter
- 2 whole Sweet Onions, Halved And Thinly Sliced
- 1/4 teaspoons Salt
- 1/4 teaspoons Pepper
- 1 whole Pie Crust
- 2 whole Bosc Pears, Peeled And Thinly Sliced
- 1 Tablespoon Flour
- 2 ounces, weight Blue Cheese
- 1/4 cups Chopped, Toasted Walnuts
- 1 whole Egg, Beaten
- Melt butter in a large skillet and cook onion until caramelized, stirring frequently.
- It will be brown and limp and will have cooked down significantly.
- Season with salt and pepper.
- Toss sliced pears with flour to coat.
- Roll out pie crust to a 14 to 16-inch circle.
- Transfer to a large baking sheet or pizza pan.
- Spread 1/2 of cooked onion over pie crust, leaving a 4-inch border all the way around.
- Layer pears, remaining onion and blue cheese.
- Top with toasted walnuts, if desired.
- Fold the pie crust border up toward the center, pleating as you go.
- There will be a small hole in the middle, exposing the pear mixture.
- Press the dough lightly and brush with beaten egg.
- Bake at 425 degrees (F) for 20 -25 minutes till golden brown.
- Let cool slightly and cut into wedges to serve.
