Thai Green Curry

  1. Heat oil in large pot over medium heat.
  2. Add shallots and curry paste; stir-fry 1 minute.
  3. Blend coconut milk with 1?4 cup basil and lime zest in blender or food processor; add mixture to pot.
  4. Add bamboo shoots with their water, green beans, potatoes, carrots and salt to taste.
  5. Stir, and cook uncovered 10 minutes.
  6. Add tofu and soy sauce.
  7. Cook 5 minutes, until green beans are just tender.
  8. Add remaining basil and serve.
