Steaming Hot Ginger Flavored Simmered Daikon Radish and Atsuage (Thick Fried Tofu)
- 10 cm Daikon radish
- 1 pack Atsuage
- 5 Green beans (optional)
- 4 slice Thinly sliced ginger
- 400 ml Dashi stock mixed with water
- 1 tsp Dashi stock granules
- 1 tbsp Sugar
- 2 tbsp Soy sauce
- 1 tbsp Sake
- 1 tbsp Mirin
- Cut the daikon radish into 1-2 cm wide slices, cut each slice in half and bevel the edges.
- Parboil the daikon for about 10 minutes.
- Pour boiling water over the atsu-age to remove excess oil.
- Cut into 1 cm wide pieces.
- Cut the green beans into 2-3 equal pieces.
- Add the ingredients to a pot.
- Add the daikon radish and atsuage and bring to a boil.
- When the daikon radish is soft enough, add the green beans and simmer for about 2 minutes.

- Transfer to plates and serve.
