spicy indian dry rub
- 6 tbsp curry powder
- 3 tbsp coarse salt
- 4 tbsp chilli powder or paprica for milder flavour
- 1 tbsp ground coriander seeds
- 1 tbsp ground cumin seeds
- 1 tbsp dried mint
- 2 tsp turmeric powder
- 2 tsp ginger powder
- mix well and store in a cool dry place in an air tight container.
- rub into your chicken or fish and shallow fry to cook out spices
- if you only have regular table salt, make it 2 tables spoons because the crystals are smaller and it will be too salty (you can always add more salt never the other way round)
