Southwestern Pot Roast

  1. Place potatoes in 3 1/2 to 4 quart slow cooker.
  2. Coat beef with flour; place on potatoes.
  3. Arrange carrots around beef.
  4. Pour salsa over all.
  5. Cover and cook on low heat for 8 to 10 hours.
  6. Remove beef from slow cooker; place on cutting board.
  7. Pull beef into serving pieces, using 2 forks.
  8. To serve, spoon sauce over beef and vegetables.
