Simple Basic Marinara Sauce

  1. In a large saucepan, add pepperoni and cook over low heat until fat is rendered and they are crispy, Watch as they burn easily.Remove from pot and drain on paper towels
  2. Into fat rendered from pepperoni add olive oil, then onion and garlic, soften for about 1 to 2 minutes.Add all remaining ingrediemt, except parsley ad simmer until thickened, about 60 to 90 minutes, uncovered, add parsley the last 5 minutes of cooking stir often.
  3. This sauce is a great basic sauce, great just on pasta or with meatballs and sausage, or in any recipe asking for a marina sauce.Add sauteed meat to make it a meat sauce.
  4. Or sauteed even sauteed mushrooms or peppers.
  5. The pepperoni is yours to eat, it is great crumbled on a green salad!
