Simple Basic Marinara Sauce
- 2 28 ounnce cans of italian plum tomatoes, pulsed in food proccesr a few seconds
- 1 15 ounce can petite chopped tomatoes
- 4 clove minced garlic
- 1 medium onion, chopped
- 1/2 tsp italian seasoning blend
- 1/2 tsp black pepper and salt to taste
- 1/4 tsp hot sauce, such as franks brand
- 1 tbsp heavy cream
- 1/4 cup fresh grated parmesan cheese
- 2 tbsp fresh chopped italian parsley
- 20 thin slices pepperoni
- 1 tsp good olive oil
- In a large saucepan, add pepperoni and cook over low heat until fat is rendered and they are crispy, Watch as they burn easily.Remove from pot and drain on paper towels
- Into fat rendered from pepperoni add olive oil, then onion and garlic, soften for about 1 to 2 minutes.Add all remaining ingrediemt, except parsley ad simmer until thickened, about 60 to 90 minutes, uncovered, add parsley the last 5 minutes of cooking stir often.
- This sauce is a great basic sauce, great just on pasta or with meatballs and sausage, or in any recipe asking for a marina sauce.Add sauteed meat to make it a meat sauce.
- Or sauteed even sauteed mushrooms or peppers.
- The pepperoni is yours to eat, it is great crumbled on a green salad!
