Bean and Sausage Stew
- 3 cups great northern beans, soaked 8 hours to overnight
- 1 large onion, diced
- 4 garlic cloves, minced
- 2 lemons, juiced
- 2 12 tablespoons olive oil
- 2 teaspoons fresh thyme, chopped
- 4 cups chicken broth
- 16 ounces kielbasa, sliced
- 1 teaspoon cumin
- 1 teaspoon dried oregano
- 2 basil leaves, cut in thin ribbons
- salt and pepper, to taste
- Heat a dutch oven over medium heat.
- Add olive oil, then add onion and garlic.
- Saute until soft.
- Remove onions and garlic, add kielbasa and evenly brown.
- Add all remaining ingredients to the pot and simmer for at least 2 hours, stirring frequently.
