Baked Chinese New Year's Pudding

  1. Cream butter and sugar.
  2. Beat in eggs one at a time.
  3. Sift together rice flour and baking powder.
  4. Beat in rice flour alternately with coconut milk and milk.
  5. Fold in coconut.
  6. Pour batter into 2 well greased 8" cake tins.
  7. Bake at 350F (180C) F for 1 hour and 10 minutes.
  8. Cool completely before cutting into squares.
