Aromatic Fish Parcels
- 12 ounces tiny new potatoes
- 2 tablespoons olive oil, plus extra to brush
- 1 14 lbs vegetables, such as leeks, fennel and zucchini, sliced
- 4 (4 ounce) white fish fillets
- 1 red chili pepper, deseeded and finely chopped
- 1 lemon (juice of half and the other half sliced)
- 7 ounces vine cherry tomatoes
- 2 tablespoons white wine
- 12 ounce fresh dill, to garnish (optional)
- salt and pepper
- Preheat the oven to 400F Put the new potatoes into a large pan of boiling water and cook for 1012min until tender.
- Drain well, then slice.
- Brush four 16in squares of foil with oil.
- Divide the leeks, fennel, zucchini and potatoes among the squares, seasoning generously between layers.
- Put the fish into a bowl with the chili, lemon juice and olive oil.
- Mix well, then put a fillet and a little of the mixture in the centre of each parcel.
- Divide tomatoes and lemon slices among the parcels, and season.
- Fold the foil up around the fish, leaving the top open.
- Pour a quarter of the wine (1/2 tbs) into each parcel.
- Bring the edges of the foil together to seal.
- Cook on a baking sheet for 1520min the fish should flake slightly when you open the parcel and push it gently with the tip of a knife.
- Garnish with dill, if you like.
