Pecan Balls

  1. Combine marshmallow cream, sugar and vanilla and mix well with hands.
  2. Shape into individual bite size rolls or about 5 logs.
  3. Chill dough 2 to 3 hours.
  4. Prior to removing dough from refrigerator, melt caramels and water in top of a double boiler; cook until melted.
  5. Dip rolls or logs in melted caramel and then roll in chopped pecans.
  6. Chill 1 hour.
