Janet'S Meatball Stew
- 4 c. water
- 20 prepared meatballs or make your own
- 1 (15 oz.) can Great Northern beans
- 1 Tbsp. instant beef bouillon
- 1 Tbsp. minced dried onion or fresh (1 small one)
- 1 tsp. basil
- 1 large bay leaf
- 1/2 (7 oz.) pkg. spaghetti, broken into 2-inch pieces
- 1 (16 oz.) can mixed vegetables
- 1 (16 oz.) can tomatoes, chopped
- In a 4-quart pan, combine water, frozen meatballs, undrained beans, beef bouillon granules, onion, basil and bay leaf.
- Bring to boiling.
- Add spaghetti.
- Simmer, covered, 20 minutes or until meatballs are heated through.
- Stir in drained mixed vegetables and undrained chopped or crushed tomatoes.
- Heat.
- Serve with Parmesan cheese or grated sharp cheese, Monterey Jack, Swiss or cheese of your choice.
- Very good.
