Apple, Onion And Potato Pancakes Recipe
- 4 x Baking potatoes
- 2 x Peeled green apples
- 1 x Yellow onion
- 3 Tbsp. Asiago cheese
- 1 tsp Dry tarragon
- 1/2 tsp Nutmeg Salt and pepper to taste Extra virgin olive oil for frying
- Directions: Boil the potatoes in their skin till they are just tender when pierced with a knife.
- Drain and cold.
- Remove skins and shred the potatoes on a box grater, along with the apples and onion.
- Place the potatoes, onion and apples in a large bowl.
- Fold in the cheese, tarragon, nutmeg, salt and pepper.
- Heat the extra virgin olive oil in a large saute/fry pan and form 3" round pancakes.
- Saute/fry the pancakes till golden brown on both sides, approximately 2-3 min.
- Serve with smoked salmon and tomatillo-corn salsa.
