Apple, Onion And Potato Pancakes Recipe

  1. Directions: Boil the potatoes in their skin till they are just tender when pierced with a knife.
  2. Drain and cold.
  3. Remove skins and shred the potatoes on a box grater, along with the apples and onion.
  4. Place the potatoes, onion and apples in a large bowl.
  5. Fold in the cheese, tarragon, nutmeg, salt and pepper.
  6. Heat the extra virgin olive oil in a large saute/fry pan and form 3" round pancakes.
  7. Saute/fry the pancakes till golden brown on both sides, approximately 2-3 min.
  8. Serve with smoked salmon and tomatillo-corn salsa.
