Rice And Lentil Pilaf
- 1/2 c. chopped onion
- 1 Tbsp. vegetable oil
- 1 c. uncooked brown rice
- 3 c. water
- 1/4 tsp. ground cinnamon
- 2 tsp. vegetable bouillon granules (can substitute 2 beef bouillon cubes)
- 1 Tbsp. tomato paste or 2 Tbsp. ketchup
- 1/2 c. dried lentils (uncooked)
- 1/2 c. shredded carrot
- 1/2 c. unsalted sunflower seeds (salted ok)
- 1/2 c. raisins
- 1 c. cooked chicken breasts, cubed
- Saute onion in oil in a skillet until tender.
- Add rice and stir until lightly browned.
- Add water and next 4 ingredients; stir well.
- Cover; bring to a boil.
- Reduce heat and simmer 30 minutes.
- Stir in remaining ingredients and cook 20 to 25 minutes. Yields 6 main dish servings.
