My Favorite Sandwich

  1. Slice the veggies into 1/3 slices, brush lightly with olive oil and season with salt and pepper.
  2. Heat a grill pan over medium-high heat.
  3. Arrange the veggies in a single layer, and cook for approximately 3-4 minutes on each side.
  4. Remove from the pan and place on a bun, top with mozzarella and fresh basil, and the other half of the bun.
  5. But Im sure you knew that part!

eggplant, zucchini, red pepper, onion, mozzarella cheese, fresh basil, salt, or rolls
