Banana Muffins
- 2 c. all-purpose flour
- 1/4 c. sugar
- 1 Tbsp. double-acting baking powder
- 1/2 tsp. salt
- 1 egg
- 3/4 c. milk
- 1/4 c. salad oil
- 1 c. mashed bananas
- 1/2 c. coarsely chopped walnuts
- Preheat oven to 400u0b0.
- With pastry brush, grease well muffin pan cups.
- In large bowl with fork, mix flour, sugar, baking powder and salt.
- In small bowl with fork, beat egg slightly, then stir milk, salad oil and bananas into beaten egg.
- Add egg mixture all at once to flour mixture and with spoon stir just until flour is moistened. Add nuts, if desired; stir briefly.
- (Avoid overmixing; batter should be lumpy.)
- Spoon batter into muffin pan.
- Wipe pan clean of any spills.
- Bake 20 to 25 minutes for 12 muffin pan, 30 to 35 minutes for 6 muffin pan, until golden and tester comes out clean and dry.
- Remove immediately.
- Serve at once.
- Store in airtight container.
