Salad of Many Greens
- 1/2 cup chopped romaine lettuce
- 1/2 cup fresh chopped spinach leaves
- 1/2 cup chopped
- 1/2 cup , cooked or canned
- 1 carrot, peeled and grated Target 2 lb For $3.00 thru 02/06
- 1/4 cup canned mandarin oranges (in juice), drained
- 6 cherry tomatoes, halved
- 1 Tbsp. extra virgin olive oil
- 2 Tbsp. orange juice
- 8 fl oz (1 cup) fat-free milk
- Mix greens, beans, carrots, oranges and tomatoes in a large bowl.
- Whisk olive oil and orange juice in a small bowl.
- Season as desired with your favorite salt-free seasoning.
- Pour over vegetables; toss.
- Serve a glass of milk with salad.
