  1. preheat oven.to 200 C/ 180 fan/ 400 f/ gas 6.
  2. cut peppers in half discard seeds and pith.Place in a roasting tray drizzle with oil and season,bake for about 20 minutes until they start to soften ,set aside .
  3. heat oil in a pan gently fry garlic and courgettes for 3 minutes ,then add tbe diced.tomatoes.
  4. ,once the tomatoes have softened, stir in breadcrumbs and tbe oregano ,season.
  5. remove from heat,add the diced mozzarella, spoon the mixture into the peppers,return to oven for 15 more minutes or until bubbling.
  6. this makes 4 main meals or 8 starters
