sig's stuffed sweet peppers with vegetables and mozzarella.
- 4 Italien red or green pointed,sweet peppers
- 2 tbsp olive oil
- 2 tbsp olive oil
- 1 courgette( zucchini; finely diced
- 2 tomatoes finrly diced
- 2 clove garlic finely chopped
- 4 tbsp homemade breadcrumbs
- 4 queen.olives ,pitted ,thinly sliced
- 1 pickled jalapemo pepper , thinly sliced
- 1 tbsp fresh oregano leaves ,or half spoon dried .
- 1 ball ,best Italien mozzarella, drained and cubed
- preheat oven.to 200 C/ 180 fan/ 400 f/ gas 6.
- cut peppers in half discard seeds and pith.Place in a roasting tray drizzle with oil and season,bake for about 20 minutes until they start to soften ,set aside .
- heat oil in a pan gently fry garlic and courgettes for 3 minutes ,then add tbe diced.tomatoes.
- ,once the tomatoes have softened, stir in breadcrumbs and tbe oregano ,season.
- remove from heat,add the diced mozzarella, spoon the mixture into the peppers,return to oven for 15 more minutes or until bubbling.
- this makes 4 main meals or 8 starters
