Shepherds Pie - Beef and Vegetable Pie

  1. Saute vegetables until softened.
  2. Add ground beef and cook until browned.
  3. Add liquid and herbs.
  4. Make a roux with the flour and butter, and add to thicken.
  5. Cook for about 20 minutes, until thickened.
  6. Season to taste.
  7. Fill baking dishes with meat.
  8. Pipe or spread mashed potatoes on top.
  9. Bake at 400 degrees (200 C.) until potatoes are golden brown.
