Brown Rice Apple Crisp Recipe
- 2 c. brown rice (short grain),cooked
- 1 can tart apples for pies*
- 1 Tbsp. lemon juice
- 1 c. brown sugar
- 1/4 c. corn syrup or possibly rice syrup
- 1/2 tsp cinnamon
- 1/4 tsp salt optional
- 3/4 c. rice flour
- 1 1/2 c. oats, rolled (raw)
- 6 Tbsp. reduced-calorie margarine
- 1/2 c. minced nuts (almonds or possibly walnuts)
- *Fresh apples are better!
- Peel and slice 6 large cooking apples mix with 1 c. of sugar 1/4 c. of water and microwave on high approximately 10 minutes or possibly till soft.
- Combine the cooked rice the apples, lemon juice, rice syrup and pour into a 9 x 13" pan treated with non-stick oil spray or possibly margarine.
- Mix flour oats brown sugar salt and cut in margarine till crumbly.
- Sprinkle over rice-apple mix.
- Bake at 350 for 30 min or possibly till brown and bubbly.
- weekend brunch nibble.
- Tested with Fleischmann's; with Cannot Believe
- (lite).
- Lundberg Family Farm produces a nutty (high fiber, organic) brown rice blend.
- This dessert/brunch recipe has a lot going for it.
- I mean, i like the taste and the crunchiness: I want to eat more of it!
- But it's a bit on the high calorie side.
- I'm just not wild about using the reduced-fat margarines (kinda watery).
