Last-Minute Shortcake

  1. In a bowl, combine dry ingredients; cut in the butter until crumbly.
  2. Beat the egg and milk; stir into flour mixture.
  3. Spoon into five individual microwave-safe 4 oz.
  4. custard cups.
  5. Place all of the cups in the microwave at once and cook on medium for 3 minutes.
  6. Cook on high for 2-3 minutes or until the cakes test done with a wooden pick.
  7. Serve warm or at room temperature with strawberries and whipped cream.
