Pecan Catfish Fish Sticks
- 2/3 cup pecans, finely chopped
- 1/2 cup Ritz cracker crumbs (about 16 crackers)
- 1 1/4 teaspoons salt
- 1/2 teaspoon freshly ground black pepper
- 1 pound catfish, cut into 1/2-inch fingerlike pieces
- 1/2 cup mayonnaise
- Lemon wedges, for serving
- Preheat the oven to 400F.
- Lightly grease a baking sheet.
- In a shallow dish, combine the pecans, crackers, salt, and pepper.
- Coat each fish stick with the mayonnaise, then coat with the pecan mixture.
- Arrange the fish sticks on the prepared baking sheet.
- Bake, turning once, for 12 to 14 minutes, or until the fish is cooked through and the coating is golden brown.
- Serve with lemon wedges.
