Baked Chimichurri Chicken with Broccoli
- 1 pkt. SHAKE 'N BAKE Chicken Coating Mix
- 1/4 cup chopped fresh cilantro
- 1/4 cup chopped fresh parsley
- 3 cloves garlic, minced
- 1 Tbsp. lime zest
- 1/2 cup KRAFT Zesty Lime Vinaigrette Dressing
- 6 small boneless skinless chicken breasts (1-1/2 lb.)
- 3 cups broccoli florets
- Heat oven to 400 degrees F.
- Cover baking sheet with foil; spray with cooking spray.
- Combine first 5 ingredients in pie plate.
- Pour dressing into separate pie plate.
- Dip chicken in dressing, then in coating mixture, turning to evenly coat both sides of each breast with each.
- Place on prepared baking sheet.
- Bake 25 min.
- or until chicken is done (165 degrees F).
- About 5 min.
- before chicken is done, add broccoli to saucepan of boiling water; cook 4 min.
- or until crisp-tender.
- Drain broccoli.
- Serve with chicken.
