Oyster Mushroom and Spring Onion Frittata

  1. In a small bowl, whisk together the eggs.
  2. Add the milk, salt, and black pepper and whisk thoroughly.
  3. Set aside.
  4. In a small nonstick skillet over medium heat, melt the butter.
  5. Add the mushrooms and onions to the skillet and saute for 3 to 4 minutes, until golden brown.
  6. Add the egg mixture to the skillet and stir well until evenly distributed.
  7. Cook for 2 to 3 minutes, until set.
  8. Flip the frittata over and cook for 1 minute, until the bottom is set.
  9. Remove from the heat.
  10. Serve immediately.
