Oatmeal Crunchies

  1. In a large mixer bowl, combine brown sugar, shortening, egg and vanilla-beat well on medium speed.
  2. Sift together the flour, sugar, baking powder, soda and salt.
  3. Blend into the first mixture.
  4. Stir in rolled oats.
  5. Form dough into small balls (1 rounded teaspoon).
  6. Dip tops in additional sugar.
  7. Place about 1 1 /2 inches apart on ungreased cookie sheet.
  8. Bake at 375 oven for 10-12 minutes, until just golden.
  9. Remove from cookie sheet to rack for cooling.
  10. 3 1/2 dozen.
