Salt Rising Bread Recipe
- 2 Irish potatoes
- 3 tbsp. white sugar
- 1 healthy pinch baking soda
- 2 c. boiling water
- 3 tbsp. corn meal
- Use sufficient all purpose flour to suit mix.
- The day before baking the bread, at noon place into a qt jar, 2 Irish potatoes sliced thin, 3 Tbsp.
- sugar, 2 Tbsp.
- corn meal, 1 healthy pinch of baking soda.
- Add in 2 c. of boiling water.
- Cover with plastic cover and set in a very hot place overnight.
- The next morning a foam should have raised to the top of the jar.
- Pour a c. of the liquid only from the jar into a bowl.
- Add in 3 Tbsp.
- sugar, a healthy pinch of soda, 1 pint sweet lowfat milk.
- add in sufficient flour to make the batch similiar to a paste.
- Place in a hot place till double in size.
- Add in shortening to a mix of salt and flour a little at a time.
- Knead till similiar to other breads.
- Put in greased pan about half full and let raise to top of the pans.
- Bake in 375 degree oven for 45 to 50 min.
