Acorn Squash Stuffed With Apple Couscous Recipe

  1. Place couscous in a small mixing bowl.
  2. Set aside.
  3. Bring apple juice to a boil in a small saucepan & pour over the couscous.
  4. Cover & set aside till the juice is absorbed.
  5. This will take 15 min.
  6. Stir in the fruit, apple juice concentrate, cardamom & maple syrup.
  7. Set aside.
  8. Steam squash halves till tender, about 15 min.
  9. Drain & place on a baking sheet.
  10. Preheat oven to 350F.
  11. Fill squash halves with the couscous mix & bake for 20 min.
  12. Top with pecans & serve.
