Sweet Ravioli
- 125 g cream cheese spread
- 14 cup caster sugar
- 12 cup dried apricot, chopped
- 2 sheets sweet puff pastry, thawed
- oil (for frying)
- caster sugar, extra, to serve
- Blend cream cheese & sugar together, fold in fruit.
- Cut 3cm rounds out of each pastry sheet, using a scone or cookie cutter.
- Place a small teaspoonful of the fruit mixture into the centre of 16 rounds.
- Brush edges with a little water, top with second round & press edges to seal.
- Heat oil & fry ravioli a few at atime, turning until crisp & golden.
- Drain on absorbent paper.
- Toss in extra sugar & serve with hot custard if desired.
