Basque Potato Pie

  1. Pare potatoes and slice crosswise as thinly as possible.
  2. Melt butter in a large skillet. Add salt, if desired.
  3. Toss potatoes in butter; coat evenly.
  4. Line bottom and sides of a 9-inch plate with potato slices, reserving 8 for garnish.
  5. Brown beef and onion in skillet, breaking meat up with fork as it cooks.
  6. Stir in tomato sauce, cheese and olives, mixing well. Spoon mixture into potato lined pie shell.
  7. Garnish with reserved potato slices. Bake at 350u0b0 for 35 to 40 minutes or until potatoes are soft and edges are lightly browned. Allow pie to stand 5 minutes.
