Turkey Casserole
- 1 Tbsp. + 1 tsp. margarine
- 1/4 c. green pepper, chopped
- 1 c. celery, chopped
- 1 lb. ground turkey
- 2 hot Italian sausage links, broken up
- 8 oz. Mozzarella cheese, shredded
- 1 pinch of oregano
- 1 c. onions, chopped
- 1 c. mushrooms, chopped
- 2 (8 oz.) cans tomato sauce
- 3 cans Mexican style tomatoes, chopped
- 8 oz. uncooked macaroni noodles
- 1 tsp. salt
- 1 pinch of garlic powder
- Cook macaroni according to directions on box; set aside. Saute onions and celery in margarine until transparent.
- Add turkey and broken up sausage; simmer for 8 minutes.
- Add mushrooms; simmer for 2 minutes.
- Add all remaining ingredients, except noodles and cheese.
- Simmer 20 minutes.
- Add noodles and mix well; spoon into a 9 x 13-inch pan or casserole.
- Top with cheese.
- Heat in oven or microwave until cheese is melted.
- This can be made ahead of time.
- Also leftovers can be frozen.
