Michael's Mocha Halo Cakes

  1. Sift flour, cocoa, soda, baking powder and salt together 3 times.
  2. Cream shortening with sugar until fluffy.
  3. Combine whole egg and egg yolks, beat well and add to creamed mixture.
  4. Combine coffee and buttermilk.
  5. Add sifted dry ingredients and liquids alternately in small amounts, beating well after each addition.
  6. Pour into greased cupcake pans and bake in moderate oven (350F) for 20 minutes.
  7. Makes 18 medium or 12 large cupcakes.
  8. Mocha Icing: Sift sugar.
  9. Cream butter.
  10. Add sugar.
  11. Beat until smooth.
  12. Add remaining ingredients.
  13. Beat until well blended.
  14. Frost cupcakes.
