Seafood Soup with Garlic and Ginger
- 2 each onions peeled, quartered
- 2 cups garlic
- 1 pinch ginger root
- 2 each leeks white part only
- 3 tablespoons butter
- 8 ounces shrimp
- 8 ounces scallops
- 4 cups chicken broth
- 1 x salt and black pepper
- 6 each scallions, spring or green onions
- Add onion, garlic, ginger and CHOP with 4 or 5 quick pulses.
- Remove from bowl.
- Slice leeks.
- Remove.
- Heat butter in saucepan and add onion, garlic, ginger and leeks.
- Cook 10 min.
- until veggies are very tender and fragrant.
- Cut seafood into approx.
- 1/2 in.
- pieces.
- Add to veggies and cook 1 min.
- Add stock and bring to boil.
- Cook 5 minutes.
- Season w/ salt and pepper.
- Meanwhile, slice green onions through the small feed tube.
- Cook one minute and then serve.
