Chris's Meatball Soup
- 1 (46 ounce) can tomatoes (46 fl oz) or 1 (46 ounce) can vegetable juice (46 fl oz)
- 1 lb ground turkey or 1 lb ground beef
- salt and pepper
- 1 (16 ounce) bag frozen mixed vegetables
- 1 cup pasta (any kind)
- cooked ground meat until completely cooked, drain off grease and set aside.
- Sometimes I minced garlic or garlic powder for extra flavor.
- pour tomato juice into large sauce pot and add frozen vegetable, cook to a simmer.
- when the juice is warm and vegetable start to cook and meat.Simmer until cook through, about 10 or 15 on low to medium heat.
- Add salt and pepper to taste.
- Add in pasta, cook until doneDon't add pasta especially if it is noodles until the end or they will become mushy and soak up a lot of the juice.For extra treat sprinkle on parmasean cheese!
- YUMMMYNOTE: My mom also puts cooked cabbage in hers!
