Current Zest Scones
- 2 14 cups brown rice flour
- 1 12 cups plus 1 tbsp garbanzo bean flour
- 1 teaspoon baking powder
- 12 teaspoon baking soda
- 14 teaspoon salt
- 12 teaspoon orange zest
- 1 cup canola oil
- 1 cup sugar
- 1 cup rice milk
- 14 cup currants
- combine the first 6 ingredients.
- with an electric mixer add the oil and sugar until well mixed.
- .
- with mixer on low , alternatly add the flour mix and rice milk a little at a time until blended.
- chill the dough for 3 hours or over night.
- preheat oven to 360.
- dust your counter with flour.
- knead the currents into the chilled dough and then form the dough in a 2- inc thick disc.
- cut the disc into 8 wedges.
- place on a parchment lined cokie sheet
- bake until golden brown - about 30 mins.
