Old-Fashion Potato Soup
- 1 1/2 lb. pork steak
- salt and pepper to taste
- 1 large onion, cut up
- 3 stalks celery, chopped
- 5 medium size potatoes
- 2 c. flour
- 1/2 tsp. salt
- 2 eggs
- 1/2 c. milk
- 2 c. milk or more (if desired)
- Cut up pork into small cubes, removing all fat.
- Cover with water in a large pot.
- Bring water to a nice boil; skim top of water.
- Add salt and pepper according to taste.
- Add onion and celery; cook about 1 hour until meat is done.
- Add potatoes, cut into bite size cubes.
- Cook until potatoes are done, not mushy. Mix in a medium bowl 2 cups of flour and 1/2 teaspoon of salt. Beat in eggs and 1/2 cup of milk.
- Add milk if too dry.
- Drop into soup at full boil.
- Cook 5 to 8 minutes.
- Turn soup off.
- Add milk to taste.
