Taste kinda like pizza with no crust
- 1 medium eggplant, aubergine
- 1/4 lb pepperoni chopped
- 1/4 lb pork trimmings
- 14 1/4 oz diced tomatoes
- 1/2 cup black ripened olives
- 1/2 cup olive juice from can
- 1/3 cup dehydrated onions
- 1 1/4 cup colby and monterrey jack cheese shredded
- 2 tbsp vegetable oil
- 1/2 tsp salt
- 1/2 tsp granulated garlic powder
- Chop the pork and pepperoni.
- Heat oil add them to oil fry crispy.
- Peel and dice eggplant.
- Add to pan saute 7 minutes, then add olive juices
- Add salt, pepper, and garlic.
- Mix well add onions, olives, and then tomatoes.
- Let simmer stirring occasionally till eggplant is done.
- Add cheese on top cover and remove from heat.
- Let sit covered 5 minutes.
