Orange-Pineapple Delight
- 60 Hi Ho crackers, finely crushed
- 4 Tbsp. sugar
- 1 stick margarine, melted
- 1 can Eagle Brand milk
- 1 (6 oz.) can frozen orange juice (undiluted)
- 2 (11 oz.) cans Mandarin oranges, drained and cut in pieces
- 1 (20 oz.) can crushed pineapple, drained
- 1 (12 oz.) carton Cool Whip
- a few well drained maraschino cherries, quartered
- Mix crackers, sugar and margarine.
- Press into a 9 x 13-inch pan (save 1 cup crumbs for topping).
- In large bowl, mix together Eagle Brand milk and orange juice.
- Add oranges and pineapple and fold in Cool Whip.
- Spread mixture over the crumb crust.
- Sprinkle reserved cup of crumbs on top.
- Dot with maraschino cherries. Chill in refrigerator several hours or overnight.
- Serves 12 to 15.
