Chicken Fruit Skillet
- 1/2 chicken breast
- 1 tbsp. onion, grated
- 1/4 tsp. tarragon
- 1/8 tsp. pepper
- 1/4 cup orange juice
- 1 banana, sliced
- 5 dark grapes, halved and seeded
- Rice
- Cut chicken into 1-1/2" chunks.
- Place in skillet.
- Add onion, tarragon, pepper and orange juice.
- Cook over moderate heat, stirring constantly until chicken turns white.
- Add banana and grapes.
- Simmer covered over low heat for several minutes.
- Add more juice if necessary.
- Serve on cooked rice.
