Seafood Gumbo

  1. In Dutch oven, make dark roux with peanut oil and flour; add onions, celery and green pepper and saute for about ten minutes. Add tomato paste, then all liquids, and then all spices and chopped tomatoes.
  2. Simmer for about 15 to 20 minutes.
  3. Add more wine, if necessary.
