Chocolate Souffle

  1. Melt butter.
  2. Blend in flour.
  3. Gradually add stirring constantly, the milk.
  4. Stir until thickened.
  5. Add chocolate.
  6. Remove from fire and beat 4 eggs yolks into mixture, blending thoroughly.
  7. Add sugar.
  8. Mix thoroughly.
  9. Flavor with vanilla.
  10. Fold in stiffly beaten egg whites.
  11. Fold 1/2 of the white first, rather thoroughly.
  12. Then add the rest folding very gently.
  13. Don't stir.
  14. Pour into a greased and lightly sugared casserole and bake at 375 degrees F for 25 to 35 minutes.
