Italian Style Stovetop Mac n Cheese
- 1/4 cup asiago cheese, grated
- 3/4 cup mozzarella cheese, shredded
- 3/4 cup provolone cheese, cut into thin stips
- 1/4 cup parmesan cheese, grated
- 1 lb box of elbow pasta
- 8 oz salami, cut into small cubes
- 2 tbsp flour
- 2 tbsp olive oil, extra virgin
- 4 cup whole milk
- 1/2 tsp each, salt and pepper
- 1 pinch ground nutmeg
- 1 garlic clove , minced
- Cook pasta according to package directions.
- While pasta is cooking, in a fry pan, add salami and cook over medium heat until it gets a bit crispy on the outside.
- About 5-8 minutes.
- In a large skillet with deep sides heat pan over medium heat.
- Add oil and garlic.
- Cook garlic 30 seconds.
- Add flour and stir cooking another minute.
- Whisk in whole milk and keep whisking to prevent lumps.
- Once thickened, add cheeses and spices.
- Reduce heat to low.
- Stir.
- You are looking for a nice creamy, cheesy consistency.
- If it is too thick, add an additional 1/4 cup of milk until you reach desired results.
- Pasta should be ready, so when it is, drain and add to cheeses.
- Stir in salami now too.
- Mix well and now your ready to serve.
- No need to bake this.
- If you do want a crispy topping you can mix 4 tablespoons of melted butter to 1 cup panko bread crumbs or crushed buttery crackers.
- Sprinkle on top and bake uncovered in a 375F oven for 20 minutes.
- A nice side salad and your meal is ready!
