Leek and Bacon Gratin

  1. Preheat oven 200C / 400F Gas mark 6
  2. Bring a pan of water to the boil and add peeled potatoes.
  3. Boil drain and set aside.
  4. Clean and chop leeks in half and slice.
  5. Melt 25g of the butter in a pan then add the leeks, cook on low heat for approx 10 minutes until soft.
  6. Set aside.
  7. Slice the bacon I cut off the fat Cook with a little oil.
  8. Stirring constantly until cooked
  9. Stir in the sieved flour and mixed herbs to the bacon.
  10. Add the milk and bring to the boil.
  11. Stir until thickened.
  12. Add the cheese until melted.
  13. Save some of the cheese.
  14. Add the leeks
  15. Season with salt and pepper.
  16. Add this to an oven proof dish.
  17. Mash the potatoes and add the rest of the butter 45g with a little milk and salt and pepper
  18. Place on top of the bacon and leeks.
  19. Sprinkle with the rest of the grated cheddar cheese.
  20. Pop in oven for approx 15 minutes until golden brown.
